Feijoada (Brazilian Black Beans)

Ingredients

1 kg of black beans dried ( not from a tin)
1 / 2 kg of smoked pork sausages
1/2kg of hot Portuguese sausage or chorizo
1/2 kg smoked pork ribs, cut into chunks
100g of   smoked Bacon cut into chunks
½ kg of beef stew meat, top round or chuck, cut into 2-inch cubes
4 medium onions (chopped)
8 cloves garlic chopped
4 red chili pepper
4 tablespoons of olive oil
3 tablespoons of dried parsley
3 bay leaves
Salt to taste

                
Feijoada (Brazilian Black Beans)

Directions:


Wash the beans and soak it in cold water overnight.
The next day, drain the beans and put them into a large saucepan of cold water.
Bring to the boil over a medium heat, and then simmer for 30 minutes until tender.
Heat a very large saucepan and pour in the olive oil so it covers the bottom. Add the onions and garlic and cook until softened. Add the sausages, smoked ribs, bacon, beef, pepper and bay leaves.
Pour in the cooked beans and meat and top up with water. Simmer for about 1 hour, until the meat falls off the bone.
To obtain a creamy sauce, remove 2 cups of beans from the pan, smash the beans until forming a paste, then return the pan.
Check the salt (if necessary add a little)
Serve the Feijoada with boiled white rice, slices of orange, Collard Greens (couve), cassava flour (farinha).
